2 things can happen in a brownie cookies mix.  One is a thing called “Brookies” which are cookie dough in the shape of a brownie.  And the second brownie cookies mix is called a “Crownie” and I was interested  to find out that crownies actually come from Korea.  They are basically brownie batter in cookie form.  That’s what we are making today.

How to Make a Brownie Cookies Mix: The Process

     This recipe is as simple as making my simple fudge brownie recipe and bulking it up with a little more flour. Actually technically this recipe is closer to my cosmic brownie recipe because it has all brown sugar because I wanted these cookies to have a chewier texture.  As we learned in my s’mores crinkle cookie recipe,  baking powder is what helps cookies get that really pretty crack on top so I also bulked up on that too.

     The one thing you want to look out for as far technique goes is to only mix ingredients until incorporated.  If you over mix, you will not get that shiny papery top that brownies are known for.

Brownie Cookies (Crownies)

Brownie Cookies (Crownies)

Yield: 18 Crownies
Prep Time: 30 minutes
Cook Time: 12 minutes
Total Time: 42 minutes

Fudgy and indulgent brownies in the shape of cookies with M&M's

Ingredients

  • 1 Cup of AP Flour 
  • 3/4 of a Tsp of Baking Powder
  • 1/2 of a Cup of Cocoa Powder
  • 1 Tsp of Espresso Powder
  • 1/2 Tsp of Salt
  • 8 ounces of semi sweet chocolate chips
  • 1 stick of unsalted butter
  • 1 1/2 cups of brown sugar
  • 1 Cup of M&M's

Instructions

    1. Preheat the oven to 350• and prepare a cookie sheet by spraying it with non stick spray and lining it with parchment paper.
    2. Start by melting the chocolate and butter over a double boiler.
    3. Add in the sugars to the chocolate and stir to combine. Then let the mixture cool to room temperature before the next step.
    4. Add the eggs one at a time and stir between each addition.
    5. Sift in the cocoa powder ,flour, baking powder and salt and stir to combine.
    6. Add in the vanilla extract and instant espresso powder and stir to combine
    7. Fold in the M&M's.
    8. Using a cookie scoop, portion out the cookies about one inch apart.
    9. Bake for 1bout 12 minutes or until cracked and shiny on top.

      oh no, did I leave that out again? I’m sorry. They should be folded in last. Right after the dry ingredients.
