Dulce De Leche is a thick caramel that is one of the best toppings that life has to offer.  Dulce De Leche is Argentina’s version of caramel.  It’s a little thicker than caramel but still has that rich, creamy, sweet taste.  I have been buying it from the store for a few years now.  The only problem with that is it is really difficult to find sometimes.  

       My natural instinct when I have this issue is to make it at home.  The homemade version is very labor intensive and a little scary.  You have to heat milk and sugar together and stir constantly for at least 2 hours.  It also bubbles up and could overflow.  If you have cooked with sugar you know that hot sugar can cause quite a nasty burn.  I will make this in the future just to give you guys the recipe and show you how it’s done.  Luckily, for us there is a much easier way.

        All you have to do is take a can of sweetened condensed milk and simmer it for 3 hours.  No really.  I’m not kidding. That’s all.  But this one is a little dangerous as well.  You have to make sure to keep the can submerged with 1 inch at the very least of water.  So don’t go out and go shopping and come back to this.  This needs to be monitored to make sure the water level stays high enough.  Keep a tea kettle of just boiling water ready and check it every 30-40 minutes and top it off if you need to.  If the water level get too low the can can explode due to all the pressure so be careful.  

       When it’s done take it out with tongs and let it cool to room temperature before opening.  When you get the Dulce De Leche out of the can and taste it, it may taste a little milky.  Don’t panic!  You didn’t do anything wrong.  This is where salt and vanilla extract save the day.  It’s amazing how much these two things can do.  Milky aftertaste totally gone.

Dulce De Leche

Yield: 1 Cup
Cook Time: 3 hours
Additional Time: 1 hour
Total Time: 4 hours

A thick caremel like topping for any dessert.

Ingredients

  • 1 (14 oz) Can of Sweetened condensed milk
  • 1 Teaspoon of Salt
  • 1 Teaspoon of Vanilla Extract

Instructions

  1. Place the can of sweetened condensed milk in a large heavy bottem sauce pan. Fill the pot with water, enough to cover the top of the can by 2 inches.
  2. Bring to a boil. Once boiling, use tongs to flip the can on its side so that it doesn't rattle around in the pot.
  3. Reduce the heat down to a simmer. and continue cooking for 2 1/2-3 hours.
  4. Have a tea kettle of boiling water ready and set alarms for evey 30-40 minutes. Top off the water if it needs it. You want to make sure there is always at least an inch of water covering the top of the can. 2 inches is recommended. If the can is not covered by water it can explode causing injury. Be careful.
  5. Shut the heat off and using tongs, take the can out of the water. Let cool for at least an hour or until completely cooled. It is not safe to open the can until cool because there is too much pressure in the can and it could explode.
  6. Open the can and place contents in a seporate jar or bowl. Add salt and vanilla extract.
  7. Use immediatly, place in the fridge for up to a week or freeze for up to a month.
