How do you make buttermilk out of whole milk? I hear this question a lot. People say “Aimee, I never have buttermilk on hand. What can I use instead? Can I make it?” Well there are a few option. You can substitute it completely, you can use a commercial powder, or you can make it homemade.

To substitute an ingredient in baking, we first have to know what that ingredient does in baking. So, what does buttermilk do in baking? Buttermilk is a slightly thicker milk that is acidic. That acid releases gas, making your baked goods softer and moister.

This is also a wonderful option if you do not have buttermilk. This is a powder that you can buy at the grocery store that can be simply whisked into water. It’s just very important to remember to refrigerate extra powder once opened or it will go bad. Check it out for yourself here:

Honestly, actually making buttermilk from scratch is just as easy. All buttermilk is is milk with an acid added in. This could be whole milk, skim milk, almond milk, cashew milk, etc. So, just simply add lemon juice or vinegar to the milk and wait 5 minutes for it to curdle.
And that’s it! That’s how I made one of the greatest homemade jam recipes ever. As you can see this jam is incredibly simple and can be canned so that it is shelf stable or frozen. Homemade Buttermilk
Milk that is slightly more acidic and thicker. Used for baking
Ingredients
- 1 cup of whole milk, almond milk or any milk you like
- 1 tbsp of vinegar or lemon juice
Instructions
- Add your vinagar to your milk and let it sit for 5 minutes.
- Use immediatly.
