This baked cheesecake recipe is an old classic to me and I’m gonna show you how to make it. I’ve been making it for years. It’s my Maple Bacon Cheesecake recipe. So simple, yet so delicious and elegant. When I first had the idea for this cake I got so much flack for it. Everyone thought that any kind of meat in a cheesecake would be weird. How am I going to make sure its not soggy? Are you going to put bacon grease in there? So may questions. Well I totally eased their concerns with the outcome of this cake.. It’s absolutely delicious. The sweetness of the cake goes perfectly with the saltiness of the bacon.
The whole reason for a water bath is so that the cheesecake bakes gently. Too gently for bacon to cook and be crispy. So that is why I cook mine before hand, chop it up and throw it in. Plus, if you just threw it in raw, grease would release from the bacon and make the cake soggy. Then came the question of the bacon grease. I have tried this cake both ways and I find that butting the grease just in the crust makes it a little crunchier and firmer which I really like. But hey it’s up to you.

Maple Bacon Cheesecake
A sweet and salty cheescake with crunchy bits of real bacon.
Ingredients
For Crust
- 3-4 Graham Crackers
- 1 Tbsp of Unsalted Butter (melted)
- 1 slice of Bacon (chopped or pulsed in the food processor
- 1 Tbsp of Granulated Sugar (optional)
- 1 Tbsp of Bacon Grease
For Cheesecake
- 1.5 Blocks of Cream Cheese (softened)
- 1/2 of a cup of Granulated Sugar
- 1/4 of a Cup of Greek Yogurt
- 1/2 of a cup of more of maple syrup
- 2 Strips of Bacon
- 1 Tbsp of Vanilla Extract
- 2 Eggs
Maple Glaze
- 1 Cup of Maple Syrup
- 1 Strip of Bacon
Instructions
For Crust
- Preheat the oven to 350 degrees and prepare a 6 inch springform pan by laying parchment paper on the bottem of the pan on the inside and wrapping the outside bottem and up the sides with alluminum foil.
- Cook the bacon and leave to cool.
- Place the graham crackers and the bacon in a food processor. Pulse until you get course crumbs.
- Add the melted butter, bacon grease and the optional sugar . Pulse to combine. The mixture should resemble wet sand.
- Press the mixture into the prepared pan in an even layor.
- Bake for 10 minutes or until golden brown.
- Freeze for 1 hour.
For Cheesecake
- Place the softened cream cheese in the bowl of your stand mixer, fitted with a paddle attachment. Beat for 5-10 minutes or until smooth. Scrape down the bottem and the sides of the bowl and beat again until incorperated.
- Repeat this process with the sugar, the vanilla extract and then the greek yogurt.
- Add the maple syrup and beat to incorperate. Taste the batter to make sure you are happy with the amount of maple syrup. Add more if you like.
- Add the eggs one at a time. Scrape down the bottem and the sides of the bowl before adding the next egg.
- Pour the batter onto the prepared crust. Spread the batter until even. Tap the pan on the table to get out any air bubbles.
- Bake in a waterbath in the oven for 45 minutes to an hour or until the edges of the cake or set but the middle jiggles slightly.
- Turn off the oven, crack the oven door and leave the cake in the oven for an additional hour to cool.
- Take the cake out of the oven and place in the fridge overnight.
For Glaze
- Bring 1 cup of maple syrup to a boil in a small sauce pot.
- While this is happening, Cook and chop up the bacon.
- After it boils, reduce to a simmer and reduce for 10 minutes or until reduced by half.
- Let the glaze cool a bit and the pour on top of the chilled, unmolded cake.
- Scatter the chopped bacon over the top.
