Golden Oreo Summer Pudding Cake

Golden Oreo Summer Pudding Cake

Yield: 9x9 inch baking dish
Prep Time: 20 minutes
Total Time: 20 minutes

A variation of my oreo pudding with golden oreos, fruit and vanilla pudding.

Ingredients

  • 1 Package of Golden Oreos
  • 4 Cups of Milk
  • 2 packages of (3.4 oz) Instant vanilla pudding
  • 1 (8oz) Tub of Cool Whip
  • 1 (8oz) Package of Softened Cream Cheese
  • 1 Teaspoon of Vanilla Extract
  • 3 Kiwi's (or more if you like)
  • 1/4 of a cubed watermelon

Instructions

Prep

  1. Place 1 package of oreos in a freezer bag and use a meat tenderizer or rolling pin to bash the cookes into pieces. You want texture in this so somewhere in between a crumb and a large chunk of cookie is perfect.
  2. Whisk together the milk and the instant pudding mix until combine. Leave covered in the fridge for about 5 minutes or until set.
  3. Mix the softened cream cheese and the cool whip together with a rubber spatula or electric mixer until combined. Store this in the fridge covered until everything else is ready.
  4. Cut and peel the fruit into thin pieces.

Putting it all Together

  1. Spray the bottem of a 9x9 inch baking dish with non stick spray.
  2. Add half of the cookie crumbs to the bottem in an even layor.
  3. Add half of the pudding on top and spread out to an even layor with a small offset spatula.
  4. Add half of the cool whip mixture and spread it out to an even layor.
  5. Scatter half of the fruit on top.
  6. Repeat the process with the remaining ingrediants but just remember to save some cookie for the top.
  7. Scatter the cookie crumbs on top.

Notes

This dessert without the fruit would typicaly last a week but because the fruit makes this kind of soggy, its only good for 2-3 days.
